I am converting a 6' x 6' (ceiling height ~ 10') room into a walk in kegerator. I plan on using a CoolBot and a 220V 1 ton minisplit. The question I have is about the insulation. The room is made of ~12 inch thick adobe brick walls. The temperature outside the room will range from 60 F to 80 F and little direct sunlight will be incident on the walls. Should I just but r-25 insulation on the walls and ceiling and call it good? Is there anything about building a refrigerator into an adobe room that I should know about? I've searched everywhere online and I can't find anyone that has done this exact thing.
 
I'm not sure about your application but I know about walk in coolers from work. Make sure you have a way to drain your condensation from the cooling unit. You can use a floor drain or drain into an ejector pump. I'd imagine the amount of h2o will stabilize after you pull moisture out of the bricks but it will change with the seasons.

It sounds like you have a great potential space!
 
This is pretty much what I want to do to make a fermentation chamber. Mine would be in the wood storage by the basement fireplace. It is relatively stable temp wise, but gets too high in the summer.
