Hey everyone just wanted to say hi real quick. I'm a total newb, this is all rocket surgery to me.

This past weekend I started my first brew, an Excelsior Altbier from Midwest. It's in the primary fermenter right now. I plan to move it to a secondary this weekend.

I'm excited about all of this and looking forward to how my first brew might turn out. Looking forward to learning more from all of you.

if you want my totally professional opinion gained after millions of years of brewing billions of gallons of beer in my closet , here it is . Oh wait I may have made up a little of that but the rest is true , sort of , maybe .
Secondary is useless waste of time . I would leave it in the primary for a month or two if you want it to be real clean and smooth without that secondary work and risk. You get the same cleaning effect as the trub is going to settle out nicely after a couple months . At least a month . Of course if it is not fairly cold where you keep it at then you may need to cold crash to drop out more of that yeast if you want to.
i put my last batch in a room that is about 60 degrees after it fermented for 3 weeks at about 70 . Left it there for 2 months and it was so smooth and clean .

So if I wanted to have them bottled and ready to drink by late March, would you then suggest using a secondary?

Is the purpose of a secondary only for clarity?

The temp right now according to the fermometer is around 78.

I'm in the southeast, in Clear Lake.

I just bottled the first batch mentioned above two days ago. Really looking forward to tasting it. It smelled awesome.

What have you brewed so far?
 
Well so far Ive brewed 2 Rye Ales they were my first 2 batches (2gl) and they were okay I guess not the best but got the job done lol.. but I wasn't expecting to brew something from St.Arnolds line up on my first try eighter, Now I have in the fermenters to be bottled by Friday a 2 gl batch of a Backyard Brown Ale, and a 5 gl batch of a Wildflower Wheat :D should be fun and tasty im hoping maybe next weekend Im going to do a 5 gl batch of an American Pale Ale see how it goes its been a bit crazy these days my newborn came home last Monday and I am closing on a home on this Friday other wise id be brewing this weekend lol.

Just FYI don't be disappointed if your first batch isn't as great as you thought it would, you learn from your mistakes and get better as it goes im not a master brewer but im headed to my 5th batch and I can definitely see a difference not just in the beer but in my confidence which is awesome compared to the nervous wreck I was in the first batch ... so build confidence and youll brew a great beer... Cheers
 
Hello there! I am also in your same boat as a total beginner. Just did my first batch as well from Midwest, but am afraid I may have made a mistake down the line. Oh well... you have to start somewhere!

Yes you do believe me my first batch was drinkable and did the job but I made some mistakes and learned from them, but I can assure you that the guy who first said "practice makes perfect" was probably a home brewer lol
