Hey My name is Jeff & I am brand new to brewing. I have always wanted to do it but just never have before. I just bought my first kit, the one from Coopers. I also bought their Sparkling Ale kit, that's going to be my first. I am a self proclaimed beer connoisseur lol I love the stuff and am always trying new ones. So I feel its only natural that I try making it myself. I have been in the construction industry for almost 8 years & can totally see myself building some really killer backyard brewery sometime in the near future lol. Anyway I'm glad to have found this site & look forward to talking with everyone and especially look forward to making some great beer!

Welcome to a GREAT hobby. I read some time ago that there are five rules of homebrewing. They struck a chord of truth, and here they are.

1 - sanitize
2 - sanitize
3 - sanitize
4 - patience
5 - patience

Don't sweat the rest, and enjoy the process. Probably the best part of homebrewing is that it can be as simple or complex as you want it to be. It's all up to you.

Thanks Joe! I have been reading everything I can find on the internet and like you said, sanitation and patience both seem to be requirements. The sanitation I wont have a problem with, the patience though is another story lol we'll see how I do with that. Thanks for making me feel welcome!

Actually, we use the word "obsession" because it is very much that for most of us. The force is strong! :p
 
Patience is the answer. The best way to find it is to open just one beer a week after you bottle and taste the difference. It will get much better every week. After about 3-4 weeks (sometimes longer) you will be glad that you didn't drink them all right away. Plus, if you brew a lot quickly then you will always have some waiting and won't feel the need to drink your young homebrew.
