I originally had two ideas in mind, an alcoholic Root Beer, and a more 'traditional' herbal beer/gruit (or rather, one using traditional ingredients). I hit a few stumbling blocks on the route to these recipes, most notably the difficulty of obtaining sarsaparilla root in anything other than half-kilo sacks and Bog Myrtle in any form. The malt base is inspired by a porter base, with what should be lots of toasty notes (here's hoping)

Anyway: the recipe is below

Malts

3kg Irish Pale Ale Malt
500g Crystal Malt
250g Chocolate Malt
250g Roast Barley
250g Melanoidin Malt

Hops

14g Fuggles (60 Minute Boil)

Spices

{28g Horehound
15g Meadowsweet
5 Allspice Berries
4" piece of licorice root
5g Cinnamon
7g Fennelseed } - 60 Minute Boil

{15g Woodruff
10g Meadowsweet
1 Vanilla Pod
14g Ginger
7g Spearmint} - 15 Minute Boil
 
For anyone whose interested, there was way too much Horehound in this, It tasted sour, tannic and awful, further, the meadowsweet was leaves, rather than flowers, so it had a fainttaste of antiseptic!
