Specifically a nut brown ale. I found a recipe for a nut brown ale I want to try and I am trying to decide if I want to stick to the yeast recommended in the recipe or if I want to experiment and try a hef yeast to add some banana flavor. I am just not sure if there are reasons I should not do it or what the risks are of pitching a hefenweizen yeast in a brown ale recipe. any thoughts you guys would like to share please do.
 
There is a style of all barley ale made with a hefe yeast, called damfbier. Personally Im not a fan, I just wish I was drinking an actual hefe, but its ok. Theres no risk, per se, but also remember hefe yeasts also produce a strong clove flavor.
