Doing a 5G BIAB batch of Hefe this weekend with wlp300 in a 1L starter. My wort volume going into fermenter is est to be at 5.5G. My question is how much krausen can I expect to form with this beer fermented at 65F?

I have three sizes of FV's- 7.8G pail, 6.5G pail and 6G carboy. I really prefer the 6G as that is a clear carboy with a two hole stopper that can accommodate both my airlock and Inkbird temp control probe suspended directly in the wort. With the other two FV's, I simply tape the probe to the outside of the FV and cover it with a beer coozie with painter's tape.

Will the 6G carboy offer too little headspace? I don't use blow offs so this is a consideration. This is the first time I have used 300 for a Hefe and not sure what to expect.
 
I'd say 7.8g pail AND a blowoff.
Hefe yeast=Monster Kreusen!

Advice is sound. One disadvantage of nontransparent FV pails is that it is hard to see or tell what kind of krausen action is really going on unless you see foam thru the airlock or blowoff tube. But, you have both answered my question by saying I will get big action with this yeast! I'll use the 7.8G FV and tape the temp controller probe to the side as usual. THANKS!!
 
I believe this is the Weihenstephan strain. It can get pretty wild so use the vessel with the largest head space you have. At least 30%.

Yes, I believe Wyeast 3068 and WLP 300 are both the Weihenstephan strain. This is probably the standard Hefe yeast used by many for traditional Hefeweisen beers. Looking forward to trying this 300 for the first time. I expect it to be about the same as 3068 in all honesty.
