I would like to make a hard root beer. From what I have been reading, there seems to be two general methods for doing this: 1) make a batch of root beer from roots or extract and then fortify it, or 2) or brew basically a session beer and add root beer extract after fermentation, or brew it with the roots.
I would like to get input from those who have done this before; experiences, pros and cons, outcomes, etc.
