6.5lb. Belgian pale
6.5lb. Golden Promise
.75 Belgian Biscuit
.75 honey Malt
.5 Chocolate pale 200-250l
total= 15lb.
Water= 1.25qt. per lb.= 9.375g
Hops
1oz Nugget @ 45 min.
1oz. Cascade @ 30 min.
1oz Nugget @ 15min.
1oz. Cascade @ 5 min.
1 lb. Dark Belgin candy sugar
Primary- White Labs-Abbey Ale WLP530= 2 weeks
Secondary-2oz cascade, 1oz nugget 2 weeks
Brewing Today. What do you think?
 
I just bottled this beer yesterday and the hop aroma/taste profile mixed surprisingly well with the specialty malts, that balanced chocolate caramel with the home grown hops; nuggets lend a earthy spice along with the high bittering value, and the cascades lending a citrus flower aroma. The O.G. was 1.070 and Finished @ 1.015. which was still a little high for my taste. Give this beer 2 months bottle conditioning and I think I got a winner with this recipe. I also Added one whole vanilla bean to the secondary for one week. The was a slight vanilla aroma when bottling, and I think enough flavor to balance out the chocolate pale. I'll have to see in another few months when these babies are primed.
