Ok, I am not new to brewing. I run a 5 gallon AG set up and have a temp controlled refrigerator for fermentation.

I have noticed that many of my beers have a grape/wine taste and also a slight metallic flavor. Other people who have sampled it, who are also homebrewers, have not mentioned it to me. I dont know if it is me and not really there or are they just being nice. The one guy, I specifically asked him and he said he couldnt really tatse it.

So, my question is, what can cause a grapey/wine and a metallic off tatse?

Is it fermentation? I use food grade plastic buckets and my mash tun is a cooler, so the only metal is in my BK and plate chiller.

Any ideas? I dont think it is infection either. I am a nut about cleaning and sanitizing.

I have never tested my water, and I do not use any additives.

Here is a recpe for a Doppelbock that I used a triple decoction mash for.
15 lb Munich
2lb Pilsen
1.5 lb Caramunich
1 lb Vienna

Used WLP833 German Bock yeast

Hallertau hops

Fermented for 30 days at 55 then lagered at 32 for 12 weeks.

This had the "grape/wine" metallic flavor to it.

Any ideas?
 
I use a Cpvc manifold in my cooler which then runs through a brass ball valve and nipple. All my lines a silicone, high temp. My brew pots are SS with SS pick up tubes, and ball valves.

Can fermentation lead to a winey/grapey flavor? I dont know of any esters that lead to this.
