I made a batch of Graff Cider pretty much exactly to Brandon's recipe. I used Nottingham yeast and fermented around 10 days at lower temps (mid 60's) with an FG of 1.009. When I was bottling I took a sample and it seemed partly carbed already. Is this off gas? Will it affect my bottle carbing? I also noticed that it has more of the warm alcohol note going down then Apfelwein I made recently, although it is only around 7% compared to the Apfelwein which is around 9%+?

If you're sampling at 10 days, it's still pretty green. So don't worry about the alcohol taste. I've made both, and whatever Brandon might say about it being ready right away, it needs some time (IMHO).

If you use the Tastybrew bottle priming calculator, it takes that residual carbonation into account.
 
Oops, I better check carbonation constantly then. I used about 1 cup of corn sugar for 6 gallons.

Turned out really well I thought, does taste a bit green though right now.
