I was using ECY 20 for the first time. Knowing that Bug County is a proven product with reliable results, I opted to forgo a control batch with ECY 20 alone.

Brewed up my golden sour (recipe will follow).
I decided to do a 12 gallon experiment.

Full volume left open overnight to gather local flora.

6 gallon carboy inoculated with ECY 20 the following morning.
6 1/2 gallon carboy inoculated with ECY 20 and Lacto from overnight sour mash.
Small sample collected of only wort from overnight spontaneous ferment.

A couple of things.
I expect the ECY to out compete the local flora. Good chance of minimal contribution.
Pitching the Lacto from the sour mash only hours before the ECY probably will mean little contribution.
Despite that. I was in an adventurous mood...so we shall see.
At least my small sample will give me an idea of the character of the local flora alone.

Golden Sour. All grain.
12 gallons.
OG 1.042
IBU 5.4
SRM 2.6

13 lbs 3.6 oz Canadian Pilsner
5 lbs 8.2 oz White Wheat Malt
8.9 oz Acid Malt

30 g EKG at 60 min.

Mash at 156 F for 1 hour
Mash was very acidic. Readings of 4.9 to 5.0. If that is accurate, I consider that a positive in this situation.

Steep 1 lb of instant oats at 180 F.
Boil for 1.5 hours.
