so I am working on my second ginger "beer" consisting of 2lbs of ginger, 13 cups of white cane sugar, 4 cups of brown sugar, vanilla beans, allspice and cinnamon sticks. I used a Scottish ale yeast and lavlin d47 both because I thought it wasn't fermenting at first, then realized my lid had a bad seal. I transferred it to the secondary today and am pleased with my gravity readings thus far (1.080 OG, 0.098 into the secondary) but this time it has a funny smell, kind of a farty sulfuric smell. it tastes the same as the last batch but the smell is....different. anybody run into this ever with different brews and is there a way to eliminate it? I was thinking of adding some orange peels to it today too to maybe mask it and sweeten it up a little bit. thanks for any input/advice!
