Today I brewed a Brett IPA with Gigayeast's Sweet Flemish Brett. I've done some great IPAs using Trois so I thought I'd give this strain a try. I made a 1 liter starter and let it sit for 10 days. Day before brew (yesterday) i decanted and poured off 100ml of slurry to save for another brew. Then I made another 1 liter starter with the rest of the slurry. I pitched this active starter into the wort at 68F.

OG 1.060
IBU 62
SRM 5
88.2% Pale Malt
8.8% Golden Naked Oats
2.9% Carafoam
60min - Magnum 15.2 ibu
15 - Nelson Sauvin 14.1
15 - Sorachi Ace 16.4
5 - Nelson Sauvin 5.7
5 - Sorachi Ace 5.9
5 - Amarillo 4.9
Dry hop 1oz each of Nelson, sorachi and Amarillo for 5 days.
Adjust mash pH to 5.4 with lactic acid. Ferment at 70 for the first few days and raise temp 1-2 degrees a day until it
reaches 76.
