Today I brewed a Brett IPA with Gigayeast's Sweet Flemish Brett. I've done some great IPAs using Trois so I thought I'd give this strain a try. I made a 1 liter starter and let it sit for 10 days. Day before brew (yesterday) i decanted and poured off 100ml of slurry to save for another brew. Then I made another 1 liter starter with the rest of the slurry. I pitched this active starter into the wort at 68F.

Yes, please report on how this turned out. I currently have some of this yeast sitting in my fridge.

This ipa cane out great. Early on lots of stone fruit. Finished very dry in 2 weeks at 1.005. The hops really shines through. I stashed a few bottles away for a few months and when I just came back to it the beer has completely changed. Hops are mostly gone. Probably at 1.000 now. Very effervescent lots of hay and barnyard funk. It's like a happier farmhouse ale now. If you've opened a stone enjoy after its exactly like that now. I use this yeast all the time now.
