Hi,

So I've been brewing for a bit and meaning to get into sours for a while. I've decided to make the leap and go for it. I was wondering if there are any suggestions for where to start. I've been looking a lot of recipes and reading about the styles in general, but I'm looking for some guidance on where to start. For instance, I've noticed a lot of recipes include Sacc and have ~25 IBU's worth of hops and some just pitch the Lacto blend straight up and have ~5 IBU's. Is there some where I can read a bit on how the different approaches affect the final beer? I would also be interested in building my own blend of micro organisms, but don't really know where to start in terms of keeping a culture. Any ideas for resources or a guide/book on getting started with sour beers and lacto cultures would be much appreciated.
