I just bottled my fourth batch of home brew, and if anything can be determined from tasting the wort at that time; I am very excited for this one. This site has been such a help, and after the initial beginner mistakes and looking here for answers each brew has been getting better. The one I just bottled is a Citra Weizen, and after my first simple hefe weizen turned out rather...meh, I looked here for answers and discovered the promise of temperature control during fermentation. So, after eliminating some of my other mistakes, and keeping my fermentation temps lower (62-63), I can already tell this will be my best brew so far. Such an addictive hobby... :mug:

Learning and progressing is the best part. (Well, maybe the beer..)
I made me 34th batch today, I'm still learning and still having fun.
Fermentation control is huge. Brew on!

Fermentation temp is key to good beer. I bet it will taste awesome cold and carbed. Don't be surprised when it disappears faster than you thought it would.

That's what I've read, is that proper fermentation temp control is probably the most drastic improvement for the new home brewer.

Ferm temp is the number 1 most important step. What's amazing is a swamp cooler is cheap or free.
