U am about to make my first non kit brew and was curious if there was a way to chill the wort without a wort chiller and what is the best way to do so?
 
Oh no. No wort chiller? Ice bath? Pickup 25' of copper, hose, and clamps and make one. About an hour of your time.
 
I just put my brew pot in an ice bath and use my paddle to gently, gently, ever so gently create a swirling motion around the outside of the kettle. It works really well. Try not to stir fast or create a splash. Since I brew with a 15 gallon kettle now, I purchased a $15 metal trash can to dunk my pot in.
 
I use a homemade chiller and a large plastic tub with ice water.

This is the method I used, but mine is far uglier. It works though:

Once I had just finished brewing, or actually just a few more minutes on the boil when I had to rush out and take hubby to the hospital, just turned it off, put the lid on good so nothing could get it... When I got back to it after 24 hours or so, it was cooled. That batch turned out fine!! And hubby recovered from that incident fine too. I have since done the same thing when I drank too many beers while brewing and didn't make it to the chill part.

Isn't this the no-chill brewing due to issues brewing method?

i'm going to recommend not lifting/moving 5+ gallons of boiling hot wort, especially if you're like me and like to enjoy a few beers while brewing. The only way I could imagine this being safe is if you were sober and using a pulley system or something similar.
 
Thanks for the advice. My next step is to acquire a plate chiller + pump. I'm not a fan of the copper tubing wort chiller. It take just as long as an ice bath and cleaning the copper tubing isn't my idea of a good time.
