Once I had just finished brewing, or actually just a few more minutes on the boil when I had to rush out and take hubby to the hospital, just turned it off, put the lid on good so nothing could get it... When I got back to it after 24 hours or so, it was cooled. That batch turned out fine!! And hubby recovered from that incident fine too. I have since done the same thing when I drank too many beers while brewing and didn't make it to the chill part.
Isn't this the no-chill brewing due to issues brewing method?
Since I brew with a 15 gallon kettle now, I purchased a $15 metal trash can to dunk my pot in.
