I am just starting to force carb a pale ale i made 2 weeks ago. Unfortunately i find it to be rather bland. I plan to try it again tonight, and get my wife's opinion on it.

If it's still lackluster I was wondering if I could add 3lbs peaches and 1lb raspberries to the keg? I have the head room in the keg available and had been wanting to add fruit to a beer sometime anyway.

My plan would be: Degas and warm the keg overnight. Mash the peaches and raspberries and store them overnight with a campden tablet. The next day add them to the keg and let sit a week.

Any problems with this? Or just a bad idea?

I'd honestly just puree the fruit and add it in. Let it sit at room temp with the fruit for 24 hours, degas and throw it back in the kegerator.

Why degas? Throw it in cold, let it warm up to do it's thing then put it back in the fridge. If you plan on pulling them out make sure you cool it down again before depressurizing or it'll foam on you. As long as it's cold when you open it you should be able to leave it gassed up.

Ok, so no need to degas it seems. Week seem ok to let it sit on the fruit? Then transfer to another keg for serving?
