I picked up a Lefse Blonde extract kit. I am planning on brewing a 5 gal batch on Friday and letting it sit for 2 weeks before siphoning it into 5 separate 1 gallon jugs for secondary fermentation.

Once in the secondaries, I want to add 4 types of fresh fruit, extracts, zest or purees to the beer. 1/beer and keep one for a control.

What fruit should I add?
 
Strawberry, peach, watermelon, and cucumber. At least those are the ones I have in various stages of doneness or planning!
 
When I do a fruit/extract brew I am partial to apricot for wheat and cream ales. I get two pounds of dried apricots, let them soak in apple juice overnight, boil them for 20 minutes or so, cool, and then puree them in a sanitized blender. I add them to the primary three days in and then add a 4 oz. bottle of apricot extract and 4 oz. of lactose along with my carbonation sugar at bottling. YMMV.
 
I've used strawberry with belgian blonde before. It turns out tasting a bit more like grapefruit though in my experience. Then again i throw in about an ounce or two of orange peel too in the last 5summer minutes of my boil so that could have something to do with the citrus taste. Its quite good though.

5 lbs blanched strawberries is what I do in the secondary after 2 weeks primary.
