Does it make the zest less flavorful/aroma if I zest oranges as I eat them over the course of a few days or more as opposed to zesting all them on brew day?

Does the zest just turn to dried zest youd buy at the LHBS?

10 gallon batch. Going to take quite a few oranges
 
I would think that the citrus oils would oxidize somewhat quickly if exposed to the air over a period of days. The flavor intensity would be blunted by that.

For my grapefruit pulpkin, I zest my grapefruit rinds into a half-pint jar of vodka over a few weeks time period. Then dump the whole thing into the fermenter after primary is done. I'd think this method would work with any citrus.
