Hi all thanks for looking in, I have some Pindo berries (palm trees not dates) anyhow, I was wondering about boiling. Will that change any structure of the fruit where the yeast might have a problem? I know beer likes certain temps to release sugars and starches from the grain.

Not familiar with that type of fruit but I do know that boiling fruit can release pectin which will cause chill haze. So if you're looking to get a nice clear wine, you may not get that by boiling the fruit.

I think it'll be fine for the yeast whether you boil it or not. I believe it's just more of an aesthetic thing.

Cooked fruit will still ferment. Cooked fruits often have a "cooked" flavor to them that is different from the fresh fruit flavor. Most recommend against cooking for that reason.

Will Freeze to Masticate then. New to this wine deal, I made a batch before using apple juice but not fresh fruit.

From what I seen about the fruit is that they have pectin and if you boil them it might be jelly like so I won't boil it, just hand mash the fruit and discard the seeds and put the flesh in mess bag for fermentation.
