As the title says, I scored a free vial of WLP630 from the LHBS today because it expired a year ago. I use a lot of "expired" yeast and plan on reviving it with a starter before using it, so that's not an issue. My question is: should I treat this like a regular yeast and pitch a starter as usual or should I do some sort of sour-mash beforehand? I did some searching and couldn't come up with many good answers. Hearing from anyone who has first-hand experience with this yeast would be appreciated.

Hi tgolanos,

I would grow the starter a tad warmer ~30C because of the lacto. You could play with the temperature if you want less lacto sourness just grow it on the cool side ~18-20C
