Lindeman's makes a faro. I haven't had any other faros to compare it to, but I like it. You should be able to find it at some of the bigger liquor store chains around the state.

Huh last one I was in was SPECs warehouse in Houston and I was disappointed to not see Lindemanns faro, just the gueuze and lambics. If you see any up around DFW pm me and I will go get. Thanks.
 
I recently made a lambic, and its been sitting on the secondary for a while now. I did the raspberries a bit earlier. I think it had been fermenting in primary for maybe 6-8 weeks, then I added raspberries in primary, and have since transferred it off the fruit and bulk of the cake at maybe 3 months and am bulk aging now. Letting the bugs do their magic. I also did the complex mash where I started at like 110F, ramped up to 122, then 134, then 148, then 160 then mashed out... and it took like 3 hrs to mash... but I read that's how the belgians mash it to make the wort perfect for the combination of the yeast and bacteria... I'll have to see how it comes out. I expect it to age at least a year total, if not 2. I tasted it at one point and MAN was it funky :p made my tongue all tweaked for a while. I'm at about 3 months since brewing now, and its still going well, I even think I'm starting to see a pellicle forming! Yay!
