While checking my APA, that's been fermenting for a week now, I noticed the color was very blonde. The color was way off from what I was expecting it to be, so I looked in my fridge and, much to my chagrin, there sits my Crystal 40.

So, here's my question. Could I steep the grains with, say 2 qts of water and then rack it to my fermenter?
 
You certainly could. How much C40 did you miss out on?
I'd use as little water as possible to minimize dilution of the existing wort.
You could also just leave it be :)
 
It would probably be tough to step in such a small amount as to not dilute the beer too much. Maybe just boil up a small amount of amber DME and add that to the fermenter. It would probably be OK without the crystal too. It's only optional for the style. Be sure the check that the added volume doesn't throw off the IBUs or hop flavor/aroma too much or you'll have to add some of that with the amber DME.
 
It was 200g in a 2.5 gal batch.

Ibu's should ok considering I had it in the recipe.
