So I'm new to kegging and just built a keezer. I have a C02 system and a Nitrogen/C02 mix system for stouts and a Guiness faucet. When I carbonate my normal beers I usually just set the C02 to 30psi and let it sit for 24 hours. How do I carbonate the stout beer that will be using the nitrogen set up? Same way? Any help is appreciated.
 
Well, 30psi is the serving pressure on a balanced nitro system (if you have short lines it will need to be less). I did the set it and forget it method with my last stout on nitro-mix. Takes a few weeks to get just right but it's worth it. It's going to be difficult to force carb it with the mix or straight CO2 quickly, and get the right carb level. I shoot for the perfect pour. So many people with these setups have terrible pours. If you spend the money please do it right. Otherwise what's the point? Good luck! You could also naturally carbonate with sugar (apparently Guinness does this, or so I read), then hook it up to the gas mix and serve.
