For those who have DIY'ed Hop Stoppers, Could I make this work?

Possibly. You might be able to use it like a false bottom if you flip it over. Another option is to get two of them and try to nest one rim inside the other making a mesh sandwich. Flip it up on edge and run your siphon tube through the metal rim part and down near the bottom.
Careful with that 18-8 stainless, it will rust if it stays wet for a long time.

Great Point!!! I never considered that. Oh well, scratch that idea. Looks like I'm gonna be sewing. Great video BTW on Hop Stoppers.
