Does anyone know how to apply foils onto wine bottles?

Are you talking about the foils on top? If so slide them on the bottle and use a heat gun (sooped up hair drier) just heat and they will shrink down tight on the bottle.

I dip them in boiling water.

I boil mine, too:
Boil water in sauce pan. Put foil on bottle. Use fingers (I use tongs) to hold edges and carefully just dip the top into boiling water to adhere. Then remove fingers from foil and dip whole thing into boiling water, twisting to get it thoroughly doused, for just a couple of seconds.
Note: Put on foils BEFORE labels if using this method.
