Not sure this is the best place for this but with this being only my 4th batch of beer, here it goes.
I recently brewed a blonde ale, extract grist
.75 oz 15 L crystal
.25 oz honey malt
3.3 lb pilsner LME
3 lb pilsner DME
2 oz Mt. Hood hop
I also used some Irish moss
1 Vial W-080
Brew day went as usual, sanitized everything as always, 1 hour boil
Cooled to pitching temp, Pitched 080 at 65 degrees, allowed this to ferment for 4 weeks in primary (would have racked but never had time)
Bottled with 1/2 cup of raw local Honey for carbonation.
I bottled into about 9 Growlers. These have been sitting for 2 weeks now.
The carbonation is amazing, smells amazing, and is fairly clear (not quite as clear as I would have hoped but nothing floating in it at all just a little hazy). Now as far as the flavor, the taste at first is perfect but the aftertaste is the exact same dry and yeast flavor that the yeast smelled when I pitched it.
Is this normal for this type of yeast (I know that it is a 1/2 lager 1/2 ale yeast, and i did fail to do a diacytl rest but from reading I wasn't sure that one would be needed).
Has anyone worked with this yeast, and know if it simply needs to be "lagered" for some time to help this clean up or if since i already bottled it this is to late.
I know this yeast is meant to be used for this style of beer and is supposed to taste VERY clean.
