Flat bottom open top fermenter question

Hi all, very novice question.. open top fermenters?

So am I right in saying the yeast is harvested off of the top? So when transferring to Keg or Brite, what are the chances of pulling out some trub/yeast from the bottom?

Also why do flat bottom fermenters have 2 outlets on the bottom and a 1inch screw fitting on the top lid?

Can anyone explain please?

When your yeasties are all done with their job and go to sleep, they will fall to the bottom. If you're going straight from Primary to Keg there will be a good sized cake of yeast and trub at the bottom of the fermenter.
I'm not familiar with your fermenter (are you draining or siphoning?) How ever you choose to rack your wort make sure you begin a couple inches from the bottom to avoid moving the yeast/trub into your keg.
Again...not familiar with your fermenter, not sure whats going on with all them ports.
