hi, can you tell me if ph 3.3 is ok for flanders standing 3 months in the primary fermenter after adding wild yeast?
 
I'd say that's about where it should be. Maybe 3.2-3.25.

Best way to determine is to just taste it though. No point hitting a number of your taste buds don't agree.

yes, that's exactly the number! so it's not too early for that ph? Since this is my first flanders I don't really understand the acidity. will it go even lower, because I wouldn't like it to go 🙈

There's no way to know whether it will drop lower. It might.

As far as whether it's too early.. ??? Yes, possibly, unless it already has a desirable flavor profile, in which case it's perfectly fine. There's no specific recipe or timeframe for success or failure when dealing with wild microbes.
