Howdy All,

I would like to try my hand at making a Hefeweizen style beer. This will be my 3rd All grain.

The ingredients which I have on hand are as follows:

12kg pale malt barley
2kg of DME Wheat
100g of Hallertau hops


I plan on making a 50 litre batch, I was told 7kg of the pale malt along with 2kg's of DME Wheat should be a good ratio. Would anyone recommend different quantities of each?

I have yet to purchase my yeast so would like to know the best kind to use, I was told just to ask the LHBS for a "Hefe Yeast". I assume I would need two sachets..?

My method will be a normal mash with the pale malt along with a 60 min boil with 50g of Hallertau than 5 mins before flameout the inclusion of the dry wheat malt, finally at flameout I will add the remaining 50g of hallertau along with some orange peel and coriander seed.

After a bit of reading the orange peel and coriander seems to be quite controversial as this is more a belgian style beer....:confused:I just want a beer which tastes similar to Weihenstephans Hefeweizen as this is my favourite beer.

If anyone could let me know their thoughts it would be greatly appreciated. hoping to clear my Sunday schedule to knock this bad boy up :ban:

I think you can make a good beer with what you have but it won't be Weihenstephan.

First, wheat dme is half wheat half base malt and the ratio in your beer is 50-50 minimum by German standard. So when you mash you base you will be at less than 50/50.

I prefer a recipe that is 40% German Pils and 60% german wheat. I use hallertau mittelfrüh and wlp300 but in your case the weinhenstephan wheat yeast is available from Wyeast.

Like I said I think you can make a fine beer with what you have but it might not be what you're looking for.

Oh, and if you can ferment at 62F....

Is there no way of getting straight Wheat Malt Extract?? I was considering buying malted wheat and just adding it to the mash but I would like to keep the volume which I am going to boil to a minimum.

Last time I brew up 50 litres I had pots on the BBQ and pots on the stove hah! All will be solved once I convert my Sanke Keg to a boiler and find a nice propane burner.

Cheers for the feedback, if I get close to the style of beer which I'm imagining than I will be a happy camper.

Cool, that is definitely better on the wheat dme. Yeah just try to get as much wheat as you can for your system.
