I visited my local shop for some brew supplies and snagged an oatmeal stout kit for cheap. With the low cost I'd like to try adding some flavor. It's an extract kit with grains, I grabbed a packet of s-04 for yeast.
I want to do a chocolate oatmeal stout. Been reading on using cocoa nibs soaked in vodka and want to try that method. A couple questions on procedure.
Do I add the vodka/nibs to primary after fermentation is complete? Or rack to secondary over the vodka/nibs?
In either case, should I bottle when the flavor is where I like it or rack to a clean carboy and let it age more?
