Just started my first mead 12 days ago, and I read in the kit that I got that I shouldn't shake or add air to the brew after the 5th day when I made a second add of yeast nutrients, but have seen online that I should stir or mix it up during the first few weeks. I haven't done it, because I don't t know what to do haha. I guess I just need some info and knowledge. How much longer do need to let it ferment in the glass jug before I change it over to smaller or bottles

Yeast only need oxygen at the beginning phase of fermentation. After that gentle stirring to degas the CO2 and keep the yeast in suspension is beneficial. You rack when the fermenting is done - need a hydrometer to know when.
