First time making an Apfelwein. So here's what I used.



5 gallons of White House apple juice with no additives.



2lbs of brown sugar



1 packet of Red Star Premier Cuvee wine yeast.

OG: 1.060



mixed it all up in my 6.5 gallon carboy, now to play the waiting game. I do have one question though, how long does it take to start fermenting? just curious as to when i'll hear the air lock start bubbling.



I also figured im gonna leave it sitting the in primary for about 2 or 2.5 months, then transfer it to bottles and let it sit till the 6 month mark if can wait that long. wish me luck! :mug:

Mix like that should take between 24-48 hours...I haven't used that particular yeast but with most of my wine yeasts it takes around 36 to get a nice foam on top. You didn't sulfite, right?

Alright thanks man. I figured it would be some where around there, just wanted to make sure. And no, I didn't add anything else to it.
 
I typically use Montrachet, and don't get much foaming. In a 6g carboy i can easily fit another 1/2- 1 gallon.

Usually takes off within a day or two.
 
Since I have more room should I add some more Apple juice, or am I to late for that?
 
This is what I woke up to this morning. Looks likes it slowly starting to come along.
