Hey guys! Just racked over my first batch of skeeter pee. Made 2 gallons, OG: 1.070, FG: .994. Sat in primary for just short of two weeks. Now, I plan on back sweetening, then bottle pasteurizing so I have a nice fizzy drink. Is it necessary to degas if I plan on doing this?? I've also read it will clear faster if I degas it, is that true as well?

Yeah, degassing will help it clear faster. In any case, by the time it clears it will be degassed anyway.
 
Well, I did give it a degas, and it's already really clear... Gave it a small taste test too, and it's quite sour ha. Was actually thinking about cold crashing it for the next couple of days to make it crystal clear, backsweeten, bottle pasteurize/carb, and maybe have it ready for the 4th!

I know the original recipe calls for using sugar as your backsweetener, but does anyone have experience using a frozen fruit concentrate? It's still got loads of lemon flavor, so I was thinking I'd use a different flavor concentrate to compliment it. Any ideas?
