Hey everyone!

I did my first IPA attempt last night:
8lbs Liquid LME
1Lb 2 Row Caramel 10
12oz Honey(@20 mins)
2oz Warrior(1oz @60, 1oz @40)
.75oz Cascade(.5@ 5mins, .25 @ flame out)
.5oz Centennial (@20mins)
1oz Simcoe(.5@10 min, .25 @5min, .25@F/O)
.25 Citra @ 1min

Also added 8 crushed peppercorns @ 5mins

With an OG of 1.0666(devils brew lol)

Thoughts or critiques? This was my 2nd time brewing!

Also gonna dry hop with .75oz Citra and 1.25oz cascade
 
I like your hops selection and your schedule is interesting. I'm thinking of naming my next dog "Simcoe".

Sounds tasty! Welcome to brewing, I'm sure you'll enjoy this more and more.
 
Haha interesting bad? Or interesting good? I tried to make sure all aromas were given a fair shot at making an impact! I'm a hop head and want it to really pop! I love Hopslam and that's where the honey idea came from!
 
Good interesting. I'm not convinced that there is an appreciable difference between adding hops at 1 minute and at flame out, but hey, it's your recipe. The only way to know for sure would be to brew two identical batches and only change that one factor. I've read that anything below 5 IBU change isn't noticeable. You're going for mostly aroma there, right? Late additions and dry hopping will do that for you in spades.

I like Hopslam a lot as well. I was slightly disappointed in this year's product. Perhaps it's only a trick of memory, but I recalled more honey flavor in last year's Hopslam.

Keep in mind that honey is nearly all fermentable sugars, so drink it while it's young or that honey flavor will mostly disappear. I made a honey wit one time and the flavor was very evident at first, but almost non-existent after a couple of months.

I'd be curious to know what the flavor is like with both honey and the peppercorns.
