I've only got about 8 brews under my belt, but decided to try my hands at creating my own recipe. The goal was a lighter beer with a flavor of cucumber water. Wanted something refreshing.
Batch size 1 gallon
Boil size 1.25 gallons
Yeast safale us-05
1 pound light dry malt extract
.25 pound amber dry malt extract
.8 ounces Hallertau hop pellets
2.25 pounds of cucumber (half peeled, half unpeeled)
Process:
60 minute boil of all malt
First hop, 60 min, .25 ounces
Second hop, 30 min, .25 ounces
Third hop, 10 min, .15 ounces
Flame out hop, .15 ounces
Cool and rack into primary. Pitch yeast. Ambient temp in brew room was about 62 degrees.
I waited about 10 days before fermentation had fizzled out, then racked into secondary on to the cucumber. Cucumber was chopped up.
I left on secondary for another 10 days. Bottled with priming tabs, let condition for 3 weeks.
Results:
Very light and crisp. The hop sense is there, but not strong. The surprise was how strong the cucumber became. It is less cucumber water and more like drinking a cucumber while smelling a salad. Overall not bad, just stronger flavor then I would like.
