So last week I did my first botting day and it went better then I thought it would as I did not have a bottling wand yet.

Bottled my S-04 cider I started on 01.11.25
Started with an OG of 1.052 that went down to 1.004 at this point I split out 1 litter of cider and added in a strong pear nectar and more apple juice back up to 1 gal with a new SG of 1.020.

I did do 1 more racking before bottling and went from a 1 gal down to a carlo rossi jug

When I bottled it the FG was back down to 1.004 so I am thinking of an ABV of around 7%

Now when I have been doing my very small samples me and the wife always found them sour but on bottling night the sour was gone. I did still back sweeten both to taste. I was unsure if I would use the S-04 again but I may

Was able to get 5 bottles and half a cup that I drank that night of the mix and the 1 litter jug.

As an early birthday present for myself I found a deal on some 1.5 gal glass fermentation vessels on amazon and started an new cider using store bought juice and mix of granny smith, fuji, and honey crisp apples using up the last on my Red Star Premier Cote des Blanc yeast. It did have an explosive first night glad I used a blow off tube
