Hi all, I'm new to cider making and hoping to make my first batch soon, but I've still got some questions.
1. If I'm using 2 gallons of juice should I use the whole yeast packet?
2. Is clarifying necessary (I'm only making this for myself) or can I just bottle right away? I've seen many different answers.

Nothing wrong with using the whole packet. It's not really possible to over pitch yeast. As for clarity, that's totally your call. We had one member who said, "Drinking clear cider is like ironing a sharp crease in your blue jeans. It's just wrong". So there ya go.
