Ended up with 3.5 or so gallons rather than 5. Had small boil over when initially bringing wort to boil. Small leak in HLT fitting...easy fix. NO STUCK MASH! Yay! All said and done, I was shooting for a 1.041 OG for my Petite Saison d' ete from NB and got 1.053 (probably b/c of the reduced volume). Any comments/suggestions?
 
Typically, if I end up under volume and over target OG I will add some water to top off the fermentor (boiled or spring water) until I reach my target gravity. Otherwise, welcome to all grain brewing!
 
Yeah, you could dilute it to bring the OG in line. I've made the extract version of that NG Saison. Very tasty. Nice herbal/grassy taste but not overly spicy like some Saisons. Guess that's why they call it a petite saison.
