Fire brew coming up

Ok so I'm getting ready to get away from Mr.Beer here in a few weeks, and have started getting things together. I bought a banjo burner so I can brew in the garage, and have ordered a 10g ss pot with valve and no weld temp gauge (been two weeks and my lhbs still dosn't have it in) I want to do specialty grains but after reading I see most of them want you to do them in just a couple of courts. Can I do them in 6g of watter for a full boil or is that just trouble?

I always steeped my grains in the boil pot full of water. (dont boil them)

I thinks this is what you are asking.

Is it ok to steep them in 6 gallons of water at the temp it asks for?
