Our FG on our nut brown ale had a suggested FG of 1.011-1.014
Ours finished (2 readings, 3 days apart) at 1.016.

How big of a deal is this and what can we do to prevent this next time?

Sounds like you nailed it. The variable could be temperature or a hydrometer that isn't calibrated..... I'd call it good.

A few degrees in mash/steep temp can do this or having slightly less total wort volume. I bet it is even better than you expect. Nut Browns should be meaty in my book. After all 1.014 is a high FG anyway.

Try some 1.002 brew sometime and you will see the difference.
