I currently do all my primary fermentation in a 7.5 gallon keg. The seal is removed and I just plug the mouth with a bung and airlock. Is this any better than doing a primary in a plastic brew bucket?

The reason I ask is that sometimes I worry about not being able to fully scrub the inside (I use a carboy brush to clean inside as best I can). Also, I would like to cut the top off and use it as an addition kettle for my all-grain setup.

meh either or... The best part about stainless is that it doesnt melt... If you're ever worried about gunk buildup... pour in boiling water to get out the most of it... then pour in some oxiclean
 
I ferment in Sanke Kegs (15.5g), and I love it. I built a keg washer out of a pond pump, some PVC and a bucket. Pour in some hot water, some PBW cleaner, and let it run for about an hour. After that, it's almost always totally clean. And just to be sure, I sanitize it prior to fermentation by boiling 3-4 gallons of water in it for about 20 minutes. So far so good...no infections!
