When I made my last brew I put it in the fermentor at about 79, sealed it up added the themp probe to the thermowell and let it cool the rest of the way to 62 before pitching the yeast(WY1050). The next morning I had active fermentation however it had appeared that the compressor died on the fridge as it was up to 65. That wasnt a big deal since I was going to raise it to that once fermentation took off. However, by the next day the tempature was at 85 and the following day, it was almost 90.
