Fermentation temp for French Saison Yeast?

Hi all,

My first Saison has been in the fermenter for 7 days. After one day at 65F I started increasing the temp to 80F over about 2 days. Now there has been no bubbling for one day. I was planning to keep the beer in the primary until the 14 th day and then check the gravity. Should I keep the temp at 80F ?

When the gravity reaches below 1.008 I will transfer to a keg for aging before force carbonation. At what temp should I age the beer and for how long?

Keep it hot for the 2 weeks. It should get down lower than 1.008, depending. At that point, throw it in the fridge. Depending on the gravity, you can probably drink it pretty young.
