so i brewed my ponderosa porter on wednesday, it is now sunday, and it would seem fermentation has stopped, i am in the process of taking a hydro reading but im willing to bet its done, but isnt this really fast to be done? its fermenting at im gonna guess somewhere around 65 degrees, the closet is a bit cooler then the rest of the house
 
Long story, but I hope helpful for impatient brewers.

I am gone from home for weeks at a time and try to brew at least 4 days before I leave. Last week I brewed on Sunday and then found out I had to be gone Monday thru Wednesday. I had two starters made up with different yeast that I had washed, prepped and frozen. I pitched them both on Sunday around 2pm. On Monday at 10AM I find out I had to leave and there was no activity. Did my freezing prep fail? Since I was already using 2 yeasts, why not three, so I added some fresh White Labs Irish Ale yeast and left.

I had split the 3 gallon batch into 3-1 gallon jugs and 2 quart jars. I added the new yeast to ONLY the jugs. On Wednesday afternoon when I got home ALL the containers had a thick Krausen ring and had gone from a dark almost black wort to a rich brown color. The OG was 1.069 and SG was now at 1.015 in all the fermenters. I then added the quart jars to the jugs and they all have a little more fermentation foam going on. Apparently the Irish Ale yeast likes something the Edinburgh and Thames Valley did not.

I now have what I may call “753”. It has 7 grains, 5 Hops and 3 yeasts. (You understand, Right? A “752” was just not cool enough.):cool:

Anyway, the reason for the post is to give you a chuckle and help you relax.
