Hi everyone did my first mash in a mangrove jack mr smicoe with grainfather. I put some of my grains in 20mins late(newbie mistake) and the had let the beer mash for an extra 20 mins. I got og of 1.054. I put some yeast in the frementer it went crazy the first four days that gravity went to 1.025 and has stayed there for 3 days. Im at 23c. ANy advice. Did i not breakdown enough sugars in mash? do I need to repitch? by the way just had a sample it tastes great. THe mr simcoe all grain kit said my og should be 1.049
 
What kind of yeast did you use? I regularly use an english ale yeast that ends at about that, last batch was 1.022....so it might not be stuck, it might be done.
 
You need to use an online convertor to get the actual SG or buy a hydrometer. Refractometers dont work in the presence of alcohol.
 
If you are using your refractometer for your FG measurement, you need to use a correction calculator. It does not read correctly with the presence of alcohol.

I don't know what is meant by "I put some of my grains in 20mins late" It would be a strange recipe if all the grains didn't get mashed at the same time. Though a more advanced technique is to add highly roasted grains later in the mash to reduce harshness.
 
I forgot the second bag of grain. Beginner mistake. I used m44 us west coast ale yeast.
