I am currently building a fermentation chamber.

I would like some switchable lighting. I mostly use a SS conical but now and then use a glass carboy.

So, am I better off using an incandescent or fluorescent light (which I have). Of course, I'm worried about skunking my beer here...

I use the purple heat lamp bulbs from wal-mart. They are like 5 bucks a bulb been using the same bulb for over a year. No skunking with those bulbs.
 
As long as you don't leave it on for long periods of time, either one should be fine for you to use.
Just remember to turn off the light when you are done.
