We did a double hopped IPA this Sunday, Pitched the yeast after activation and capped the bucket with the airlock. Started gurgling really soon I thought at about 6 hours. Monday it was in overdrive actually almost blew out the airlock, it was filled with kind of a creamy white fluid that had spilled over onto the lid of the fermentor. I cleaned out the airlock put it back in place. Now on day 2 of fermentation bubbling in the airlock has settled down to once every 8 seconds or so. What caused that initial rapid fermentation explosion? Thanx! Greg
